What's For Dinner Tonight?
I'm always that person looking for ideas for new recipes, and it's even better when the recipe is on the healthier side. Pinterest is my best friend for those recipes, and there's one recipe that I've become a fan of. I've been making it for a couple months and I'm finally going to share it with you.
Even though we are in Spring and chili is something we think of as more of a winter food item, this dish is something that is healthier and amazing comfort food. It's called Buffalo Chicken Chili. Now most people know chili can be an adventure to make in the kitchen but this dish is super easy. And for those of you who work long hours and hate coming home to cooking dinner, this dish is for you. It's a crockpot chili recipe. So in the morning all you have to do is brown the chicken and then combine the items in the crockpot. SUPER EASY!
Ingredients
1 pound of ground chicken
1 can white navy beans, drained and rinsed
14.5 oz can fire roasted tomatoes, drained
4 cups chicken broth
¼ - ½ cup buffalo wing sauce (start with ¼ cup and add more at end if needed)
1 package ranch dressing mix
1 cup frozen corn kernels
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon celery salt
½ teaspoon dried cilantro
¼ teaspoon salt
8 oz cream cheese
Blue cheese crumbles (optional)
Instructions
Brown ground chicken until fully cooked, place in crock (or brown ahead of time and store in fridge until ready to assemble)
Add remaining ingredients except for cream cheese and blue cheese and give it all a stir to combine
Add block of cream cheese on the top and cover
Cook on high for 4 hours or low for 8
Stir to incorporate cream cheese and add additional wing sauce as desired
Top individual bowls with blue cheese crumbles if desired
